There's something about the actual roasting process that still captures my fancy...it's the part of this business that I enjoy the most.

One of the things I've always loved about coffee is that it lends itself perfectly to my process-oriented personality.  When I hold a cup of coffee in my hands, ready for that all-important first sip/slurp, I know that it represents no less than half a dozen variables that all contribute to the taste.  Type/origin of bean, roast level, time since roasting, grind consistency, brew method, and water quality are all important, and a change in any of those can mean the difference between "mmmm" and "yuck."
